Southwestern Chopped Salad with Cilantro Lime Dressing



Fresh vegetables, beans, and a tangy cilantro lime dressing make up this Southwestern Chopped Salad, which is both tasty and refreshing. You can serve it as a side dish with any meal, or you can eat it by itself for a healthy and filling lunch or dinner.

Ingredients:

  • 2 cups chopped romaine lettuce
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup diced tomatoes
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup diced avocado
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup tortilla strips or chips
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

Chop the romaine lettuce and put it in a large salad bowl

Add the black beans, corn, tomatoes, red bell pepper, red onion, avocado, and chopped fresh cilantro

To make the cilantro lime dressing, mix the lime juice, olive oil, ground cumin, salt, and pepper in a small bowl with a whisk

Pour the dressing over the salad and toss it around so that everything is covered

Spread cheddar cheese shreds and tortilla chips or strips on top of the salad
