Southern Fried Chicken Sliders with Jalapeno Peach Compote



The crispy fried chicken and sweet-spicy peach compote in these Southern Fried Chicken Sliders with Jalapeno Peach Compote go very well together. It's great for a party or as a snack.

Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 cup vegetable oil for frying
  • 8 slider buns
  • 2 cups sliced peaches
  • 1-2 jalapeno peppers, finely chopped
  • 1/2 cup granulated sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1/4 tsp salt

Instructions:

Place the chicken thighs in a bowl and cover them with buttermilk

Let them marinate for at least 30 minutes, or overnight for best results

In a shallow bowl, mix together the flour, cornmeal, salt, black pepper, paprika, and cayenne pepper to create the breading mixture

Heat the vegetable oil in a skillet over medium-high heat

Remove each chicken thigh from the buttermilk, allowing any excess to drip off, and then coat it thoroughly with the breading mixture

Carefully place the breaded chicken thighs in the hot oil and fry until they are golden brown and cooked through, about 4-5 minutes per side

Remove and drain on paper towels

In a separate saucepan, combine the sliced peaches, chopped jalapeno peppers, sugar, apple cider vinegar, water, and salt

Cook over medium heat until the peaches break down and the mixture thickens, about 15 minutes

Remove from heat and let it cool

Assemble the sliders by placing a fried chicken thigh on each bun and topping it with a spoonful of jalapeno peach compote
