Couscous Zenzero, Limone e Menta



This couscous dish tastes great because it has the spiciness of ginger, the brightness of lemon, and the freshness of mint. This recipe is quick and easy, and it can be used as a side dish or as a light meal.

Ingredients:

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground ginger
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/4 cup fresh mint leaves, chopped
  • Salt and pepper to taste

Instructions:

Put the couscous, ground ginger, and a pinch of salt in a bowl that can handle heat

Add the couscous to the bowl

Put a lid or piece of plastic wrap on top and let it sit for 5 minutes

Use a fork to fluff up the couscous and separate the grains

Add the olive oil to the couscous and mix it in slowly

Mix in the lemon zest, lemon juice, and mint leaves that have been cut up

Combine well by mixing

Add pepper and salt to taste

This couscous Zenzero, Limone e Menta is great as a light meal or a cool side dish
