Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
- 1 package empanada dough store-bought or homemade
- 1 egg, beaten for egg wash
- 1 cup black beans, cooked and mashed
- 1/4 cup sour cream
- 1/4 cup salsa
- 1/2 lime, juiced
- 2 tbsp chopped fresh cilantro
- Salt to taste
Instructions:
Warm the oven up to 190C 375F
Cook the ground beef in a pan over medium-low heat until it turns brown
Get rid of extra fat
Cut up some onion, garlic, and bell pepper and add them to the pan
Cook the vegetables until they get soft
Add chili powder, cumin, paprika, salt, and pepper and mix well
Go on and cook for two more minutes
Make a circle out of the empanada dough by rolling it out
On each circle of dough, put a spoonful of the beef mixture
To seal, fold the edges over and crimp them with a fork
If you want your empanadas to turn golden, brush them with beaten egg
After the oven is hot, bake for 20 to 25 minutes, or until golden brown and crispy
Make the black bean dipping sauce at the same time
Add salsa, sour cream, chopped cilantro, lime juice, and salt to a small saucepan
Mash the black beans and mix them in
Warm up on low heat
Warm up the empanadas and serve them with the black bean sauce
