Ingredients:
- 2 cups apple cider
- 3 packets unflavored gelatin about 21 grams
- 1 1/2 cups granulated sugar
- 1 cup light corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Powdered sugar, for dusting
Instructions:
Transfer 1 cup of apple cider into a mixing bowl, then top with the gelatin
Give it ten minutes to bloom
The remaining cup of apple cider, granulated sugar, corn syrup, and salt should all be combined in a saucepan
Over medium-high heat, bring to a boil while stirring continuously
After it begins to boil, lower the heat to medium and cook it without stirring until the candy thermometer registers 240F, or the soft-ball stage
This ought to take ten to fifteen minutes
After taking the syrup off the stove, slowly pour it over the gelatin mixture
Given how hot it will be, exercise caution
Mix everything together
Beat the mixture for 10 to 12 minutes on high speed, using a hand mixer or a stand mixer with a whisk attachment, until it thickens, glossy, and almost triples in volume

To keep them from sticking, dust the cut edges with extra powdered sugar
