Caribbean Shrimp Salad with Citrus Balsamic Vinaigrette



This Caribbean Shrimp Salad with Citrus Balsamic Vinaigrette is a refreshing and tropical dish that combines succulent shrimp with a vibrant mix of greens, citrusy flavors, and a touch of sweetness from honey. Perfect for a light and healthy meal!

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 cups mixed greens e

  • 1 cup cherry tomatoes, halved
  • 1/2 red bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup toasted coconut flakes
  • 1/4 cup sliced almonds
  • Salt and black pepper to taste
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 orange, zested and juiced
  • 1 lime, zested and juiced
  • 1 tablespoon honey
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder

Instructions:

Season the shrimp with salt, black pepper, cumin, chili powder, and garlic powder

In a bowl, whisk together the olive oil, balsamic vinegar, orange zest, orange juice, lime zest, lime juice, honey, and a pinch of salt to make the vinaigrette

Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until they turn pink and opaque

Remove from heat and let them cool slightly

In a large salad bowl, combine the mixed greens, cherry tomatoes, red bell pepper, red onion, cilantro, toasted coconut flakes, and sliced almonds

Add the cooked shrimp to the salad

Drizzle the citrus balsamic vinaigrette over the salad and toss gently to coat all the ingredients

Serve immediately and enjoy your Caribbean Shrimp Salad!
