Ingredients:
- 1 cup quinoa, cooked
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Diced avocado, cherry tomatoes, cucumber, red onion, and cilantro should all be put in a large bowl together
