Quinoa Avocado Salad



This refreshing quinoa avocado salad is packed with protein, healthy fats, and fresh flavors. It's perfect as a side dish or a light vegetarian meal.

Ingredients:

  • 1 cup quinoa, cooked
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Diced avocado, cherry tomatoes, cucumber, red onion, and cilantro should all be put in a large bowl together

Mix olive oil, lime juice, salt, and pepper in a small bowl with a whisk

Add the dressing to the salad and gently toss to mix

Put it in the fridge until you're ready to serve, or serve it right away
