A hearty and comforting shepherd's pie that is gluten-free and great for cozy dinners. The meat and vegetable filling in this recipe is very tasty, and the mashed potatoes on top are very creamy.
Ingredients:
- 1 lb ground beef or lamb
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 cup frozen peas
- 2 cups mashed potatoes prepared with dairy-free milk and butter
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions:
Warm the oven up to 190C 375F
Put olive oil in a pan and heat it over medium-low heat
Put in the chopped garlic and onions, and cook until the onions are soft
To the pan, add ground lamb or beef
Cook until it turns brown
Add diced carrots and frozen peas and mix them in
Keep cooking for 5 minutes more, until the vegetables are soft
Add pepper and salt to taste
Move the mix of meat and vegetables to a baking dish
Cover the whole thing with mashed potatoes
Warm the oven up and put the mashed potatoes in it
Bake for 25 to 30 minutes, or until the top is golden brown
Enjoy while hot!
