Coconut & Caramelized Pineapple Popsicles



Indulge in these refreshing Coconut & Caramelized Pineapple Popsicles, made with creamy coconut milk and sweet caramelized pineapple. They're the perfect healthy treat for hot summer days!

Ingredients:

  • 1 ripe pineapple, peeled and chopped
  • 2 tablespoons coconut oil
  • 2 tablespoons honey or maple syrup
  • 1 can coconut milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

In a skillet, heat coconut oil over medium heat

Add chopped pineapple and cook until caramelized, about 8-10 minutes

Drizzle honey or maple syrup over the pineapple and cook for an additional 2 minutes

Remove from heat and let cool slightly

In a blender, combine caramelized pineapple, coconut milk, vanilla extract, and a pinch of salt

Blend until smooth

Pour mixture into popsicle molds

Insert popsicle sticks and freeze for at least 4 hours or until solid

Once frozen, remove popsicles from molds and enjoy!
